Homemade Oreo Cookies

Lauryn and I decided to make some homemade snacks this afternoon.  First, we made homemade goldfish crackers which turned out yummy..I will probably put up a blog in the future.  Then we made homemade Oreo cookies.  I have decided to make a separate blog dedicated strictly to food :).

Cookie Recipe
 
1 cup unsalted butter, softened
1 cup granulated sugar
1 egg
1 teaspoon vanilla extract
2 cups all purpose flour
3/4 cup cocoa powder
1 1/2 teaspoons baking powder
1 teaspoon salt
 
 
Mix butter and sugar well.  Add vanilla and egg- beat well.  Combine cocoa powder, baking powder, flour, and salt in another bowl.  Slowly mix in flour mixture.  NOTE- you will probably need an electric mixer the dough gets really stiff.  Chill for 1/2 hour in fridge.
 


While the dough is chilling make the frosting.
 
Frosting Recipe
 
1/2 cup butter
2 tablespoons half and half- I used almond coconut milk
1 teaspoon vanilla extract
pinch of salt
3 cups powdered sugar
 


 
 The cookie dough should now be ready to roll and make cut outs.  We played around with putting Unkeos on the cookies.  It was not turning out the best, so we left most of the cookies plain.
 




 
Bake at 350 degrees.  We made two sizes.  The bigger cookies (equivalent to an actual Oreo) bake for 10-15 minutes.  The miniature size (quarter size), bake for 5-6 mins.  Let cookies cool then frost.
 
 
 
 
Enjoy with a glass of milk!
